I knew excactly how this years Valentine’s Day cake should look and taste….Pink meringue vanilla frosting together with a chocolate chip cake! It’s one of my favourite flavor combinations. Normally I use a vanilla buttercream for the filling but today I decided to add two layers of meringue frosting instead. Double pink fluff! I used my small off set spatular to spread on the frosting. A generously amount of pink sugar pearls and non-parelis sprinkled on top and small pink gum paste cut out hearts to embellish the side of the cake. All of this pink sweetness is finished off with a little paper heart topper on the top of the cake! Happy Valentine’s Day to all the lovely readers of CakeJournal! Happy Caking!
I have been busy with the preperations for this years Halloween party and I just wanted to share some of the photos with you. My daughters class were invited (she’s in fifth grade) and the menu was: Witches brew, Batwings, Frankenpizza, Broomsticks, Poison cake, Dead finger cookies and bloody cupcakes. My daughter and I had also made a Bat Pinata filled with treat bags. This was a big hit and they all requested a pumpkin pinata next year……. Let me show you some photos! The garage were decorated with crepe paper garlands, and lots of flying bats. Bats flying over the buffet table. The wall were decorated with cobwebs and spiders. My favorite Halloween prop….a cage with two rats. The Windows were decorated with real cobwebs and draped cheesecloth. We had two tables where the kids would sit while they were eating. Later we removed the tables so they could dance. My cabinet of horror. The kids thought that this was really gross. I had filled old bottles with tinted water and the jar with intestines is just noodles. This year I had also bought props like a brain and a cut off hand. No Halloween without a Jack O [...]

When I got the chance to buy some paper straws I just knew what I would make…..cake bunting! So I decided to make a vintage style Halloween cake decorated with cake bunting and in the colors: white, black and orange (my favorite colors for Halloween) Inside, is a chocolate cake filled with vanilla bean buttercream. I have covered it with a white meringue frosting (I just used the meringue part from the Italian Meringue Buttercream recipe) which goes so well with chocolate cake. I used a spatular to spread on the frosting… love this technique since it don’t have to be super perfect. The small pumpkins is made out of fondant, that I have kneaded with a little Tylo powder (GumTex). This helps the fondant to hold the shape and prevent it from getting soft to quickly when placed in the frosting. I made the stems and vines out of wire covered with floral tape (should be removed if the pumpkins will be eaten). I twisted the “wines” around a pencil to make them curly. For the cake bunting I painted two wooden beads with black acrylic paint and hot glued them to the paper straws. Then I tied the [...]

I also made some red berries and some very simply brown mice to adorn the cake. All decorations are made in gum paste. Last time I made a cake with this design was 6 years agoe for my 30th Birthday. Back then the cake looked like this: I have another Birthday cake (my own) comming up very soon and this will also be decorated with a touch of fall I think. Happy Caking! Louise

We were invited to a party where the theme was pirates. So, I decided to make two pirate cakes to bring along. I have used the Wilton’s sports ball pan for the “heads” and placed them on a 10″ round cake. Inside was a chocolate chip cake with vanilla buttercream. The cakes was covered with Satin Ice rolled fondant. As I did have some problems with the Satin Ice fondant. Bubbly surface when rolling out and very very soft to handle. I would be happy if I could get some tricks on how you guys out there handle the fondant. I really love the smell and taste of it, so I would like to give it another try. The kids at the party was thrilled about the cakes and did of course not notice any flaws. Happy Caking! Louise

Inspired by the latest cupcakes I wanted to try and make some strawberry cookies. I made a paper template in two sizes. (I regret now that I did not add a little stem to the berry templates but I will do that the next time I make strawberry cookies) I decorated the cookies with royal icing made with meringue powder. The first time ever that I try and make royal icing this way. It was really easy to make, only I’m not so sure that I like the taste of it…? I made two tones of pink color and piped white dots in the wet icing to make the “seeds”. I added the green icing on the next day. I also made a little sweet cookie favor bag, to go with the strawberry cookies. Happy Caking! Louise

These petit fours are made with a delicious vanilla butter cake and a home made raspberry jam filling. They are covered with a simple pink sugar icing and decorated with pink fondant roses and small piped royal icing leaves on top. A sweet little treat for Valentine’s Day. If you find petit fours too sweet, then try to use some fruit or curd filling as this can help making the petit fours less sweet. Next time, I will try and cut three or four thin layers of cake, so that I can make them with even more fruit filling.
You may know Jacqueline Butler as the artist behind beautiful handcrafted sugar flowers like Ranunculus, Peonies and Hydrangeas. She is a highly requested sugar craft teacher and have now started working together with Craftsy, where she is taking online video courses to a whole new level. With Craftsy, you can now sit home and learn how to make two of Jacqueline’s favorite sugar flowers: The Hydrangea and the small filler flowers. These two flowers are often to be found in the sweet floral bouquet that Jacqueline makes. She will also teach you how to make the gum paste that she is using for her sugar flowers. Show you the tools that you will be using through out the course. How you color your sugar flowers. How you apply the confectioners glaze to get pretty shiny leaves (There are some really good tips & tricks here!!) and she will also show you how to assemble and arrange the flowers. I really love the way the online courses works over at Craftsy. As they offer you to be interactive with Jacqueline. She will answer the questions you may have. You can also share your photos and even take notes along the way [...]

It’s been some very busy days around Christmas but I still wanted to share my little gingerbread house with you. It is inspired by a gingerbread house that I saw in the Martha Stewart Holiday Sweets magazine from 2009. The roof is all glittered with lots of sugar. I have used gelatin sheets for the windows, which I like better than the melted candy windows. Inside is a small string of holiday bulbs, which gives the house a nice glow. I have only piped a little white royal icing on the house as I do like my gingerbread house simple. Here you can see how it looks when it’s getting darker outside. So cozy! Happy Holidays! No doubt treats for Halloween have been in focus on CakeJournal this month. Just like the Dead finger cookie tutorial. I think that a lot of you will be enjoying these creepy cookies tonight? Just cut out a white fondant disc and some black fondant for his eyes and nose and a black gourmet writer (Americolor) for the mouth. I have used a little dab of buttercream to keep the Jack’s in place on top of the brownie bites. I always use this recipe for the brownies. The flavor combinations for the cakes were: Dark chocolate mud cake, raspberry mousse and chocolate ganache. Crumb coated with Italian Meringue Buttercream and covered with rolled fondant. For the younger guests of the party. I baked some vanilla cupcakes with a spread of royal icing, sprinkles and fondant flowers. All matching the color scheme of the Christening cake. I made the owls by using an egg shaped cookie cutter and used the pointy end of the egg cutter to cut off the top of the “egg/owl”. A small oval fondant cutter was used for the “belly”. This methode could be easily be used, if you want to make fondant decorated sugar cookie owls for your next party. Happy Caking!
I find it just as fun to create cake decorations in other materials than fondant and gum paste. Sometimes it is also much easier to make a certain type of decoration with glue and paper than if you were making it with fondant. There are so many great crafty sites and here are some of the ones that I love most when it comes to making crafty cupcake toppers. This is my top 5 list for cupcake toppers: #1 Sweet paper cupcake toppers. Step by step instructions on how to make cute paper cupcake topper, using scrapbooking materials. #2 Vintage style cupcake toppers. These vintage (Easter) cupcake toppers are the sweetest. This tutorial is for a little lamb, but you can use the chick and bunny as inspiration to make your own vintage cupcake toppers. #3 DIY fabric flower cupcake topper. A great way to use fabric scraps for cupcake toppers. #4 DIY Pom-Pom Cupcake Topper Tutorial. Make a sweet pom-pom shaped decoration out of tissue paper for cupcake embellishment. #5 Pinwheel cupcake toppers. There is nothing more cheerful than pinwheels and kids loves them. I hope that you will enjoy these tutorials as much as I do. Happy Caking! [...]

I love when a new cake book or magazine arrives in my mailbox. That means, for me spending (many) hours in my favourite armchair, maybe with a cup of coffee and just diving into the glossy pages of cake. That’s why this August favourites, is all about cake reading. Cake magazines: I have had the pleasure of reading the magazines: Cakes & Sugarcraft and Cake Craft Decoration for many years now. I wrote about them when I first started this blog, back in 2007 and they deserve an extra mention again. Both of the magazines have really great cake content, and a great mix of tutorials in different levels. You can learn all sorts of cake decoration, including sugar flower making and figurines. Both magazines are for all who loves cake decorating. The Cake Craft & Decoration magazine is also the face behind the famous Cake International show in Birmingham (UK). I know that you can get two cake magazines in the US: American Cake Decorating and the Cake Central Magazine. Unfortunately, I have not read them. I would really love to. So I was hoping for some help from you guys. If you have read the magazines? Please tell [...]

We went with non decorated cookies this time. A freshly baked, crisp cookie, hardly need more decoration, other than to be eaten. Tomorrow I am continuing with the non decorated treats.
Here are another round of favourites… No cakes without eggs! This summer we decided that we wanted to start raising our own chickens. We have the French breed: Marans, also known as the “chocolate egg layers”. I have four young hens and one young rooster at the moment. I have to wait about 2 months before I can go out to the coop and collect my own “chocolate eggs”. The first cake made with my own eggs, will sure be something special! Photo from Wikipedia Squeeze bottles: The squeeze bottles are the greatest helper when it comes to flooding cookies. When I first started decorating cookies, I used a piping bag. With these bottles, I can flood lots of cookies at a time and I can store any leftover icing in the squeeze bottles. If you love to decorate cookies and don’t have one of these squeezing bottles, I can only highly recommend that you get some. I have listed a few shops where you can get them: CopperGifts Karens Cookies Cakes, Cookies & Crafts Happy Caking! Louise

All my June favourites are inspired by the upcoming purse cake. You can however still use my favourites for other individual cake projects. Cake boards: I always like to finish my cakes, when possible, with a cake board. It just really complete the look of the whole cake. I like to cover my cake boards with fondant and a pretty ribbon. Use coordinating colours and the result will be just perfect! You can see some examples here. Single cake board: Or as a double cake board (two cake boards glued together): Edible lustre dusts: I used some pretty lustre dusts for the brooch. The colours are: Pearl/SK, Iced Pine/EA, Golden Sands/EA and are from EdAble Art and Squires Kitchen. Tylo powder: Maybe one of the best helpers in my toolbox. Tylo powder helps the fondant to dry fast and holds it’s shape. It is also an important ingredient for Tylo glue, the best glue to use, when I need to attach decorations on my cakes.
We have been celebrating shrovetide this weekend. The kids put on costumes for the celebration and they hit on a decorated wooden barrel filled with candy, just like a Piñata. We also eat buns filled with chocolate or cream. This year my daugther Alberte wanted to be a sweet pink cupcake, so I had to do some research on Google for cupcake costume ideas. It took me quite some time thinking and re-thinking on how to best “bake” this costume. I used an old pink sheet for the “frosting” and stuffed it well with Poly fill. Alberte helped me, making the sprinkles out of Silk Clay. The sprinkles dried up light as a feather and was just glued on with craft glue. The hardests part of the whole costume was the fluted cupcake base, but after some help from my husband we managed to find a solution that we were all happy with. To finish off her costume, I made her a little head piece out of two “layers” of pink frosting, a crepe paper ruffle and a blue candle on top. She is the sweetest cupcake that I have ever made and she even won a prize for best [...]

Which holiday is your favourite? Mine is definitely Easter. For that reason I have decided to start out early with the Easter treats this year. I think I like Easter so much because it’s in the spring where the days gets longer, the weather gets warmer and everything starts to bloom. With Easter and spring on my mind, I got the idea of making some Easter egg shaped cake pops, coated with chocolate and decorated with sugar sprinkles. All in nice light colors to get the feeling of springtime. The cake pops are made from the same “dough” as I use for my cake bites. For coating, I used Merckens candy melts, but you could use any type of chocolate, made for coating. Using chocolate for cake decorating, is not something I do very often. Adding to this, the candy melts is a bit more tricky to melt than regular chocolate. This made it quite a challenge to get the covering of the cake pops just right. After some hair pulling and swearing, I finally got the hang of it. Here is a few of the things that worked well for me. After making the cake pops and putting them [...]

I got so inspired by the fabulous tutorial that Linda from Call Me Cupcake made for CakeJournal last week. Yesterday I made some delicious macarons with swiss meringue buttercream filling. Up until then I had tried two different macaron recipes and I must say that I think Linda’s is by far the best. In addition to a great recipe her step by step instructions was very easy to follow so I felt really safe, when I threw myself into the macaron making. I still need to learn more about the coloring of the macarons though. As I was aiming for a nice spring green color (used almost a whole pot of my favourite powdered food color) but ended up with a rather pale green instead. So any good advise will be much appreciated. Piping the macarons was one of the parts where I had forgot how tricky this acctually is. It takes a little practice piping the perfect round macaron. I did manage to get the hang of it after the first baking sheet. My second one was much better and overall I am extremely happy with my result. I have filled my macarons with swiss meringue buttercreme. The feeling [...]

Since we moved, my daughter have found a new activity instead of the ballet classes she took while we lived in Copenhagen. Horses! The local riding school is located just down the road from where we live and last weekend, we were invited to a little social gathering with the rest of my daughters riding team. I could not think of any better idea than to bring a cake with a horse motif. The cake was the chocolate chip cake that I have posted about earlier this month and it was layered with chocolate ganache. The horse motif was cut out of rolled fondant icing and the mane is piped with royal icing. The small pink flowers gave the cake a sweet girlie touch. All the girls loved it! Happy Caking!
No Valentine’s Day without something sweet. Therefor I have made some Valentine’s heart cookies and iced them with rolled fondant. To get the really deep red that I have used on some of the cookies. I have used a mix of Crystal color’s Poinsetta and Americolor’s Super Red. The mix of powder and gel together works really great and is really worth a try if you have not tried it before. The pink color is my favourite choice from Sugar Flair. I have used my alphabet cutter/embosser set from JEM, along with the pretty quilting embosser and a small rose (Wild rose set) from Patchwork Cutters and some royal icing. I wish you all a sweet Valentine’s Day! Happy Caking! Louise

If you still dont know what to make for Valentines Day, then how about making some sweet and delicious cake bite treats? I have made these pretty Valentine cake bites today. I had some chocolate cake from the Pingu Christening cake in my freezer. Together with some chocolate ganache I rolled the crumbled cake into bite size treats. Remember when you make the cake bites, not to make them too big. I could have used a chocolate coating on the cake bites but I just love the look of poured fondant icing on cakes. Poured fondant icing is time consuming to work with. So make sure that you dont rush while making them. When I cover cake bites with poured fondant icing I prefer to use the same method as when I cover Petit Fours. Remember to give the fondant icing more color when you use a dark cake and less color (if you like) for “white” cake. I used a pink pale color and it barely shows on the photos. Next time I will remember to give it more color. I piped a royal icing “swirl” and placed a pink gum paste heart on top. I used lustre dust [...]

This Pingu christening cake was made as a gift for our best friends little boy Magnus. The parents both love Pingu, so it was easy to decide what should be sitting on top of the cake. Both Pingu and the toys are made from rolled fondant mixed with Tylo powder (CMC). I also made the Pingu cake topper on thin cardboard, so that they could keep the topper as a keepsake. Inside the cake was a moist chocolate cake and raspberry mousse (recipes on the way). I coated the cake with Italian Meringue Buttercream and covered it with rolled fondant in a pretty ice blue color. I used some cookie cutters to cut out his name and the christening date was embossed on the round circles. The cake was a huge success! Happy Caking! Louise

I have two things I wanna share with you as CakeJournal’s January favourites. The first one is about the Sydney Opera House Cake made by the famous Planet Cake located in Sydney, Australia. The reason why I find this really interesting is that first of all it is an amazing project. Secondly a lot of us Danes are especially proud of the Sydney opera house since it was designed by the danish architect Jørn Utzon. Here are some facts about the amazing cake: The cake was made for Australia Day. It took them 7 days to make (60-70 hours) There were 21 volunteers who came from Australia, Qld, Vic, NSW and even one from Dubai. On top of that the whole Planet Cake staff. There was 250 Slabs of Mud Cake Used. 300Kg of Ganache 189Kg of Fondant Icing You can see videos of the making on Planet Cake. The photos are kindly provided by Planet Cake I too am working on a cake project, not as big though. A 2 tier christening cake for a little boy. Therefor I have been in the kitchen, baking delicious chocolate cakes. Cutting cakes easily without any problems was a nightmare in my [...]
