I knew excactly how this years Valentine’s Day cake should look and taste….Pink meringue vanilla frosting together with a chocolate chip cake! It’s one of my favourite flavor combinations. Normally I use a vanilla buttercream for the filling but today I decided to add two layers of meringue frosting instead. Double pink fluff! I used my small off set spatular to spread on the frosting. A generously amount of pink sugar pearls and non-parelis sprinkled on top and small pink gum paste cut out hearts to embellish the side of the cake. All of this pink sweetness is finished off with a little paper heart topper on the top of the cake! Happy Valentine’s Day to all the lovely readers of CakeJournal! Happy Caking!
With Valentine’s Day approaching, I thought I would show you how to make a collection of themed cookies. With so many girly options about, this is one for the boys! Boxer shorts and tees! This is what I used: Cookie dough Large rolling pin Cutters: Heart, Rectangle (6.5 x 4.5 cm) Baby Grow (though you can use a t-shirt cutter if you have one). Coloured fondant – Red, White & Black Royal icing Gel or liquid colours (I have used Wilton Red Red and Wilton Black) Glass of water Paintbrush Pastry brush Small sharp knife Small rolling pin. Step 1: Roll out the cookie dough and using the cutters, cut out hearts, rectangles and baby grows (or t-shirts if you have a t-shirt cutter). Then cut a small triangle from the rectangle (longest side). Then cut the bottom part of the baby grow, as in the picture below. Step 2: Then taking the rectangles (boxer shorts), use your thumb and forefinger to gently squeeze in to make waist as seen below. Then put both the boxer shorts, t-shirts and heart cut-outs onto a baking sheet and bake in the oven. Step 3: Once cooked, Roll out some red fondant and [...]

When I think of Valentine’s Day cakes, this is what pops into my mind: shades of pink and red, lots of hearts and romantic flowers. Even though I like those ideas, I wanted to make something different and exciting this year. So, for this Valentine’s Day cake, I went with a purple and green theme (since purple is so popular these days) and I used a heart shaped cutter to make cute fantasy flowers. These flowers may look challenging but honestly, they are VERY easy to make This is what I used: Purple fondant or gumpaste or 50/50 (I prefer using 50/50) Green fondant or gumpaste or 50/50 (I prefer using 50/50) Medium and large circle cookie cutters (from Wilton’s Circle cutter set) Small heart shaped cookie cutter (from Wilton’s heart cutter set) Water and paintbrush Shortening Cornstarch or powdered sugar for dusting your work area Wax paper Rolling pin Gum paste glue (to stick the final flowers onto your cake) 2 small flower forming cups (I use the Wilton brand) 2 medium flower forming cups (I use the Wilton brand) Step 1: Cover your work area with cornstarch or powdered sugar and roll out your fondant or gum paste [...]

It’s almost Valentine’s Day and to celebrate,. I thought I would show you how to make a beautifully romantic ruffled rose with a subtle difference: it is in the shape of a heart! These pretty little decorations can be used as cupcake toppers, placed around the sides of an iced cake or supported by a straw or skewer and used as a cake topper. This is what I used: Pale pink fondant (you may want to add a bit of Tylo powder or gum tragacanth to give it a little extra strength, or use gum paste or fondant blended with flower paste if your roses will be for decoration rather than eating) Heart-shaped cookie cutter Round cutter of a similar size to the heart Rolling pin Sharp knife Ball tool Veining tool or similar Sponge mat Paintbrush and water Cake of your choice (I chose to make cupcakes in pink cases to match the pink roses) Step 1: Roll out the fondant to approximately 3 mm thick and cut out circles and heart shapes. You will need two circles for every heart. Step 2: Place the hearts on a foam mat and gently soften and smooth the edges with your [...]

I have a thing for small sweet treats and petit fours are definitely one of them. These petit fours are made with a delicious vanilla butter cake and a home made raspberry jam filling. They are covered with a simple pink sugar icing and decorated with pink fondant roses and small piped royal icing leaves on top. A sweet little treat for Valentine’s Day. If you find petit fours too sweet, then try to use some fruit or curd filling as this can help making the petit fours less sweet. Next time, I will try and cut three or four thin layers of cake, so that I can make them with even more fruit filling. You can read more about how you make them in my tutorial how to make petit fours I have also found some great video’s on YouTube: Petit Four video Petit Four video part 1 Petit Four video part 2 Petit Four video part 3 Happy Caking!
Today I have been in the kitchen baking chocolate cupcakes. Since Valentine’s Day is soon approaching, I thought that some pink fondant hearts and a little pink sprinkle on the cupcakes would be in place. I have frosted them with Angel Feather Icing, which is good together with the chocolate cupcakes. You can find the recipe for Angel Feather Icing below. Angel Feather Icing Ingredients. 2 large egg whites 170 g (3/4 cup) of white sugar 1 dl (1/3 cup) corn syrup 2 Tbsp cold water 1/4 tsp cream of Tartar (alternative you can use 1 tsp fresh lemon juice) 1/4 tsp salt 1 tsp vanilla extract or almond extract Optional: Food coloring Direction. Place all the ingredients except but the vanilla into the top of a double boiler with fast-boiling water below. Take your handheld electric mixer and beat the mixture until the icing has stiff peaks. Remove the double boiler from heat, add the vanilla extract and keep on beating until it is thick, glossy. You can add drops of food coloring if you like. Spread it onto cakes with a metal spatula or pipe it onto cupcakes with a piping bag and large piping tips, like Wilton [...]

No Valentine’s Day without something sweet. Therefor I have made some Valentine’s heart cookies and iced them with rolled fondant. To get the really deep red that I have used on some of the cookies. I have used a mix of Crystal color’s Poinsetta and Americolor’s Super Red. The mix of powder and gel together works really great and is really worth a try if you have not tried it before. The pink color is my favourite choice from Sugar Flair. I have used my alphabet cutter/embosser set from JEM, along with the pretty quilting embosser and a small rose (Wild rose set) from Patchwork Cutters and some royal icing. I wish you all a sweet Valentine’s Day! Happy Caking! Louise

If you still dont know what to make for Valentines Day, then how about making some sweet and delicious cake bite treats? I have made these pretty Valentine cake bites today. I had some chocolate cake from the Pingu Christening cake in my freezer. Together with some chocolate ganache I rolled the crumbled cake into bite size treats. Remember when you make the cake bites, not to make them too big. I could have used a chocolate coating on the cake bites but I just love the look of poured fondant icing on cakes. Poured fondant icing is time consuming to work with. So make sure that you dont rush while making them. When I cover cake bites with poured fondant icing I prefer to use the same method as when I cover Petit Fours. Remember to give the fondant icing more color when you use a dark cake and less color (if you like) for “white” cake. I used a pink pale color and it barely shows on the photos. Next time I will remember to give it more color. I piped a royal icing “swirl” and placed a pink gum paste heart on top. I used lustre dust [...]

With long anticipation, here is my very special Valentine’s cake with roses. Special, because today is Valentine’s Day but also because my lovely husband and I have been together for 10 years. So I can not find a better way than to celebrate it with a gorgeous, delicious and romantic cake filled with love. I got inspired by the colors I used for the paper cone and with the small gumpaste roses that I showed you earlier it makes a perfect match. Inside the cake is a nice chocolate cake and strawberry mousse. As I had forgot to buy more eggwhites for the Italian Meringue Buttercream that I just love to use for the crumb coat, I had to use a regular buttercream. Not the best choice, since it is so difficult for me to do a nice crumb coat with the regular buttercream. The IMBC is soo much better, but after a little struggle it did end up with a nice buttercream coat to seal the strawberry mousse well indside the cake. As promised a photo of how the cake looked on the inside. I wish you all a very Happy Valentine’s Day. Happy Caking! Louise

I love to craft things that I can use for beautiful gift wrapping for my homemade treats. This paper cone will hide the sweet cookie hearts decorated with rolled fondant. Maybe for a little Valentine’s Day gift? Remember that if you use rolled fondant on your cookies Then let them dry for 1-2 days in a cardboard box. That will “harden” the rolled fondant, so it wont be sticky when packing. Also the cookies can make grease marks on the paper. So remember to pack them in a plastic/cellophane bag or grease proff paper, before packing them in paper gift boxes or like here a paper cone. Happy Caking! Louise

With Valentine’s Day soon approching, the web is loaded with all sorts of sweet ideas for making that something special for your loved ones. I came up with this idea: Valentine letter cookies. That way the receiver can spell your messages by themself, a bit like scrabble The cookies are 1 7/8″ and I have used the smallest heart from the Nesting Heart Cookie Cutters from wilton. The cookies are decorated with pink fondant cut-out hearts. For the letter embossing, I used the Jem’s alphabet cutter set. I really like the style of the letters and they are so useable because every letter is like a little stamp so you can emboss almost everything with this set. For the last touch I brushed lustre dust on the hearts to give them a little shimmer, it just dont shows well on the photos. Before packing the cookies remember to let the fondant “dry” to avoid any marks on the hearts. Happy Caking Louise
