I have used gum paste but you should be able to do it in porcelain dough.

I would say that most of my tutorials are not very complicated to start off with. Try the race car, turtle, train + many more. You can find them + many more in the tutorial section

I don’t know where you can get fondant from Ireland but many UK shops have different brands of fondant/sugar paste
