This the season for pumpkin spice, and everything nice. But are you looking for more than just the typical pumpkin cupcakes everyone expects to see at a fall party? These cupcakes give a great twist to pumpkin cupcakes by adding in a a touch of maple flavor.
What you need to make the cupcakes:
3/4 c flour
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
3/4 tsp cinnamon
1/2 tsp ginger
2 eggs
3/4 c pumpkin purée
2/3 c cane sugar
1 tbs molasses
1/3 c canola oil
1 tbs pure maple extract
Yields: 1 Dozen
Step 1: Combine first 6 ingredients (dry) in small bowl, set aside. Mix together the last 5 ingredients (wet) in a medium sized bowl. Add the dry ingredients into the wet slowly and mix until just combined.
Step 2: Scoop into lined muffin tin. Bake at 350 for 14-16 minutes.
Cream Cheese Buttercream Ingredients List:
2/3 cup butter
2 tbs heavy cream
2 tsp vanilla
3 1/3 c confectioners sugar
6 oz cream cheese
3 tbs of real maple syrup (to drizzle on top)
Step 3: Add all ingredients (minus maple syrup) into the bowl of a stand mixer. Start off on slow speed and work your way up to fast. Beat for 5 minutes.
Step 4: Pipe into cooled cupcakes and drizzle with maple syrup to add that finishing touch!
Don’t forget to add the real maple syrup drizzled on the top to give it that “pumpkin-maple” flavor!
