It’s been some very busy days around Christmas but I still wanted to share my little gingerbread house with you. It is inspired by a gingerbread house that I saw in the Martha Stewart Holiday Sweets magazine from 2009. The roof is all glittered with lots of sugar. I have used gelatin sheets for the windows, which I like better than the melted candy windows. Inside is a small string of holiday bulbs, which gives the house a nice glow. I have only piped a little white royal icing on the house as I do like my gingerbread house simple. Here you can see how it looks when it’s getting darker outside. So cozy! Happy Holidays!
This is a tutorial for the gingerbread Christmas cookie tree that I made last year. I used my Christmas cookie tree as a centerpiece on our buffet and there were such a wonderful smell of cinnamon, ginger and cloves during the Christmas days. You could also make a little forest with tree’s in different sizes and use them for a Christmas winter scenery? I have used the Christmas cookie tree kit from Wilton. But any kind of nesting star cookie cutters can be used. To get more height to the tree, use 2 stars in the same size for each “layer”. Also remember to cut out 3 of the smallest star. Since you will be placing one on the top of the tree (this is of course optional) I use the gingerbread recipe from Martha Stewart This is what I use: Baked gingerbread cookie stars Royal icing Colored green or kept in white (It’s a little hard to say how much you will be needing because it all depends on how big you want you tree) Cake board Embellished with a pretty satin ribbon (The cake board should be large enough for the biggest star) Gold lustre dust Clear alcohol/lemon extract [...]

Before December is running out and a new year is beginning. I will share with all of you, CakeJournal’s December favourites. I would love to stock up with some new cookie cutters and these two will find their way into my cookie cutter collection. First a pretty teacup cookie cutter The next one is a cupcake cookie cutter. Even though I have made my own cupcake cookie template (simply because I could not find a decent one that I liked). This cutter have just the right cupcake shape and I can always cut off the candle if I want to. The cookie cutters are from Blossom Sugar Art who also have some sweet flower moulds. Next up is from one of my favourite blogs that I often visit. Torie Jayne, a UK girl who writes about beautiful interiors. Torie also loves to bake cakes and other sweet treats and she have made this incredible beautiful Winter Woodland Christmas cake for this gorgeous Winter Woodland dessert table. If you browse through her Winter Woodland theme, you will find directions and how-to’s on how she have made the cake decorations for the cake but you will also other sweet ideas and inspiration.
I finally had some time to take a photo of my gingerbread cookie Christmas tree. 21 cookie stars decorated with lots of soft green royal icing, light golden sugar dragees and a gold painted star on top. I think that I will make a whole forest of cookie trees in different sizes next year. I hope that you all had a wonderful Christmas and I do know that I did write about a gingerbread house tutorial in a previous post but I ran out of time. Im so sorry! Happy Caking!
This year I wanted to make my Gingerbread house a little more “simple”, only decorating it with white royal icing. I have used different styles of piping details inspired by the Gingerbread houses from Martha Stewart. It is very Scandinavian, I think Like last year, I have added electric lights inside the house and I think it looks so charming when the lights burst out through the windows. I always give the Gingerbread house to my MIL and she only just threw out, last years gingerbread house a couple of month ago. So I am a bit excited, to see how long she will keep this one Happy Caking and Merry Christmas to all of you! Louise

I made these small Christmas brownie bites today. Normally, I would use a nice chocolate fudge frosting on top of my brownie bites. But today I used powdered sugar “snow” instead. I made the red berries out of red fondant, brushed with Tylo glue and then dipped in red disco sparkle from Edable Art (UK company). The Holly leaves is made with the Holly plunger from PME, also using fondant. I did not use gum paste this time. For the brownies, have I used this brownie recipe that I really like. I am happy that they just match my little homemade gift box, as I am going to use the Christmas brownie bites as a little gift for tomorrow. Happy Caking! Louise

I hope that you dont find the last of my four Christmas tutorials too late. But last night was hectic as we here in Denmark celebrate Christmas on the 24th with wonderful food, yummy treats and the excitement from the kids when they get their presents. We always make marzipan treats at Christmas and these are the ones I like the best. Marzipan Christmas bites coated in chocolate and decorated with Christmas sprinkles. This is what I use: Marzipan Coating chocolate (heat it in a dobble boiler) Small paper cups Sprinkles or royal icing Chocolate dipping spoon Step 1: Roll the mazipan into bite size balls. When the chocolate is melted carefully “dump” the ball into the chocolate and use the dipping spoon to pick it up. Shake off the excess chocolate. Step 2: Place the chocolate covered marzipan ball in the paper cup and set aside. When the chocolate is nearly dry add your decoration on the top. Set aside to dry completely. Note: if you use royal icing then wait until the chocolate is all dry before you pipe your decor. Store the marzipan treats in a air thight box. Enjoy! Happy Caking! & Merry Christmas Louise

What is better than to be spoilt with nice and beautiful Christmas cake goodies? When my brother and his girlfriend went to San Francisco I could not let them go without looking for some fun things. I especially asked them to buy Martha Stewart Living magazine for me and I think that I have read it for the 5th time by now, its really good. I also got this beautiful snowflake copper cookie cutter and some fun Christmas & Halloween sprinkles. Sweet Christmas tree ornaments made to look like small Petit Fours and a cupcake. I love all of it and think that I will bake them a little something for the nice gifts they gave me. Yesterday when I was out doing my Christmas shopping I found another mug for my collection. This time it even have a matching coaster and just because I thought it would be fun to have in my bag, I bought this small cupcake compact mirror. So this will be my early Christmas present Remember to look out for the last Christmas special tutorial that will be posted very soon. Happy Caking! Louise

Christmas is very close now and here are the third Christmas special tutorial. A beautiful glittering Christmas cookie ornament to decorate your tree. It is so easy and quick to make because you only use three things for decoration: rolled fondant icing, royal icing and edible glitter. You can of course make it in any color and the piping decoration could also be simple snowflakes, dots or whatever you like. If you dont have edible glitter and only have lustre dust then wait until the royal icing is dry before you carefully brush it with a soft brush. Edible lustre spray would also be great for this project. This is what I use: Round cookies (make the hole when they are still warm) White rolled fondant icing White royal icing with a tip 2 (remember to make a soft consistensy or the icing will “curl” when you pipe) White edible glitter (I used white disco hologram from Edable Art) Round cookie cutter (the same size for the cookies) Small round cutter Corn syrup & a brush Rolling pin Corn starch for dusting Ribbon A piece of parchment paper Step 1: Brush the cookie with corn syrup and set a side.
Times fly fast and I am a little late with the second Christmas special tutorial. Today its soft gingerbread hearts. This is a favourite treat of mine at Christmas time. All the bakeries make them and they are mostly decorated with a thin coat of dark chocolate and decorated with a scrap of Santa Claus. You can also be sure to find this kind of decorated hearts at every German Christmas market. I decided to decorate it with red flowers and holly leaves. But you could also pipe beautiful patterns in royal icing or use fondant cut outs like snowflakes and other Christmas style decor. Soft gingerbread hearts 7 oz. (200 grams) Honey 3 oz. (90 grams) sugar 1 egg, lightly beaten 1 tsp baking soda 1 tsp of ground cinnamon 1 tsp of ground cloves 1 tsp of ground ginger 13 oz. (360 grams) all purpose flour sifted I got 2 x 7″ hearts and around 12 x small 2″ hearts out of this portion. For decoration: Dark chocolate (you can leave this out and just decorate the heart as it is) Royal icing Scraps Fondant sugar flowers/leaves or flowers/leaves made out of royal icing.
This is the first of four special Christmas tutorials for you this Christmas Today it’s a Christmas wreath cookie decorated with royal icing. You can use your favourite gingerbread or sugar cookie dough for the wreath. Remember to start colouring your icing 1-2 days in advance. That way the colour will have time to “mature” and it can save you from adding too much colour in the end. This is what I use: Round cookies with holes Red royal icing (soft consistency) Green royal icing (soft consistency) Round tip 2 or 3 for the red icing Leaf tip medium size for the green icing Step 1: Pipe the green royal icing leaves on the cookie. Starting from the inside of the cookie working your way around the wreath. Set aside to dry. Step 2: Pipe small red berries randomly on the wreath and set aside to dry completly. Step 3: Voila! A nice Christmas wreath cookie for you to enjoy. Happy Caking Louise

Then they are ready for this year small Christmas gifts to my friends. It is my favourite vanilla sugar cookies decorated with rolled fondant. At first I was planing to make them all white but then I thought a brown basket was nicer. I have used a basket embosser from Patchwork Cutters to make the basket look and painted them with brown petal dust dissolved in clear alcohol. The flowers are made with the Petunia cutter from Tinkertech Two with the flower veiner. Some Holly leaves and loads of gold sparkle dust. I am really satisfied with the result. Now I just hope my friends thinks the same. Happy Caking Louise
