I think that the problem with that recipe is that there are no glucose syrup. its only water and then the dry ingredients. I tried to google a rolled fondant recipe and the recipes that came up also included: gelantine, white fat and glycerin. I know that there are recipes that dont use gelantine at all. So I think that you need to tweak it by adding some glycose syrup, glycerin and some white fat along with the rest. I would add the wet ingrediens first an then the powdered sugar. I have made JMR’s recipe for fondant, but somehow it sets very hard. Its great for working with but is there anything I can change in the recipe so it sets soft enough to cut?
