Raw Vegan Snickers Cheesecake (Mini or Large)

A rich, no-bake vegan Snickers cheesecake featuring a chewy crust, creamy vanilla filling, sticky peanut butter caramel, and a raw chocolate drizzle. Naturally dairy-free and gluten-free!

Ingredients

Base:

1/2 cup almonds (or walnuts)

1/2 cup pitted dates

1/2 tbsp cold water (add more only if needed)

Creamy Vanilla Filling:

1 cup raw cashews (soaked for 3-6 hours, then drained and rinsed)

1/2 cup canned coconut milk or coconut cream

1 1/2 tbsp maple syrup (double if you prefer it sweeter)

1 tsp vanilla essence

1 tbsp coconut oil, melted

Caramel Peanut Butter Sauce & Topping:

2 tbsp peanut butter

1 tbsp maple syrup

1/2 tbsp coconut oil, melted

2-3 tbsp raw peanuts

Raw Chocolate Drizzle:

1 tbsp cacao powder

1 tbsp coconut oil, melted

1/2 tbsp maple syrup (Alternatively, use melted dark chocolate)


Instructions

  1. Soak the cashews in water for a few hours or overnight.
  2. Make the base by processing the almonds and dates
  3. together until they form a sticky dough. Add a bit of water if required to make it more sticky. Press down in your silicone moulds then place in the freezer.
  4. For the creamy vanilla filling, drain and rinse the cashews and blend in your food processor with the rest of the filling ingredients.
  5. Spoon on top of the base to the top.
  6. For the caramel peanut butter sauce combine the
  7. ingredients in a bowl and whisk together with a spoon or fork. Drizzle the caramel sauce on top of the cashew filling then sprinkle some peanuts.
  8. Make the raw chocolate sauce in a small bowl and combine with a fork then drizzle on top of your mini cheesecakes.
  9. Place them back in the freezer and leave to set for 2-3hours. Take out 30 minutes before serving.

Notes

Equipment needed: Silicone muffin molds are highly recommended for easy removal. If using a standard metal muffin tin, line it with paper liners or cling wrap.

Allergy swaps: Substitute the peanut butter and peanuts for almond butter and crushed almonds for a delicious peanut-free version.
