I am thinking out possible treats for our haunted Halloween party. Maybe will these brownie bites be on the menu? Jack Skellington the pumpkin king, is so easy to make. Just cut out a white fondant disc and some black fondant for his eyes and nose and a black gourmet writer (Americolor) for the mouth. I have used a little dab of buttercream to keep the Jack’s in place on top of the brownie bites. I always use this recipe for the brownies. If you use milk chocolate the taste is more mild if your kids don’t like a strong chocolate taste. Happy Caking! Louise

The whole move went well and I am almost done with the unpacking of our 84 moving boxes. The summer have been so wonderful and very hot so the thought of working with sticky fondant have not been very appealing. The kids will start school next week and they are both excited to meet their new friends. The month of August also means preparations for my daughters birthday party and I have had an idea for a sweet treat in my head for an long time: brownies and meringues. A rich chocolate brownie with a sweet and crispy meringue on top. So into the kitchen to test if it would be just as delicious as I thought it would be. Since meringues is a bit time consuming to make (baking time) I started to make those first. Then I baked my all time favorite brownie recipe. To make the meringue stick to the brownie I have spread a little bit of dark chocolate ganache. Now on to the tasting and oh my they were good. Just as I imagined. Some fresh berries (blueberries or raspberries) slightly crushed would be a nice little extra flavour and texture together with the chocolate [...]

I made these small Christmas brownie bites today. Normally, I would use a nice chocolate fudge frosting on top of my brownie bites. But today I used powdered sugar “snow” instead. I made the red berries out of red fondant, brushed with Tylo glue and then dipped in red disco sparkle from Edable Art (UK company). The Holly leaves is made with the Holly plunger from PME, also using fondant. I did not use gum paste this time. For the brownies, have I used this brownie recipe that I really like. I am happy that they just match my little homemade gift box, as I am going to use the Christmas brownie bites as a little gift for tomorrow. Happy Caking! Louise

Just a quick note to wish all my readers Happy Valentine with these delicious brownies. They are the new hot thing this year so I baked a nice brownie and used a round cookie cutter to cut out small round brownies. Placed them in paper cups and piped a nice chocolate swirl with two pink hearts on top. Happy Caking! Louise
