Yes, it’s true. These days, in addition to pumpkin and all things fall, I’ve been crazy for coconut! There’s something about the texture and the little burst of sweetness that makes this ingredient so fabulous, especially in desserts.

Today, I’ve compiled 9 of my favorite coconut recipes to share with y’all. Hopefully you love coconut, too!

1: These Coconut Chocolate Chip Bars are so jam packed full of flavor and goodness. I love the combination of chocolate and coconut, and these bars look so dense and delicious.

2: What a yummy way to start your day! This recipe for Blueberry Coconut Muffins is so perfect for a crisp, cool, fall morning.

3: Toasted coconut is so underrated. It’s so easy to do, and serves as a sweet and crunchy topping perfect for ice cream, brownies, and anything you can think of. This recipe for Toasted Coconut Pound Cake incorporates toasted coconut, giving it that added sweetness factor that makes you want another slice!

4: Coconut Cream Pie is such a classic, and this recipe is so easy and delicious. Perfect for the last few warm days!

5: This recipe for classic Coconut Cake reminds me of G’s mom’s recipe. So moist, airy, and delicious all at the same time. YUM!

    I love, love, love coconut. Will have to try some of these recipes for sure. The last thing I made (but didn’t blog about) with coconut in it, was Cassava Cake. A Filipino cake made with cassava and coconut. It was so good! There are a million recipes for this cake on the internet.

    Not a big coconut fan, but my Mom used to make this to die for coconut cake every christmas. I wish I knew how she made it but I have no clue!
