Cookie cakes are a classic that everyone loves. But below we’ve decided to share the ultimate, triple-layered cookie cake recipe we’ve adapted from Lindsey at Life, Love and Sugar.

Ultimate Layered Chocolate Chip Cookie Cake Ingredients

Here are the ingredients you will need for each layer of this cookie cake:

Classic Chocolate Chip Cookie Cake

  • 3/4 cup salted butter, room temperature
  • 3/4 cup dark brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1 1/4 cups semi-sweet chocolate chips

Chocolate Chip Cookie Cake

  • 3/4 cup salted butter, room temperature
  • 1/2 cup brown sugar, lightly packed
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 cup cocoa (I use Hershey’s Special Dark)
  • 1 teaspoon baking soda
  • 1 1/4 cups semi-sweet chocolate chips

Confetti Cake Batter Cookie Cake

  • 3/4 cup salted butter, room temperature
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup flour
  • 15.25 oz box confetti cake mix
  • 2-3 teaspoons sprinkles
  • 3/4 cup white chocolate chips
  • 3/4 cup semi-sweet chocolate chips

Vanilla Buttercream

  • 3/4 cup salted butter
  • 3/4 cup shortening
  • 4 cups powdered sugar
  • 1 1/2 teaspoons vanilla extract
  • 2-3 tablespoons water or milk
  • Sprinkles

Ultimate Layered Chocolate Chip Cookie Cake Directions

You must make each layer of this amazing cookie cake separately. But the end result is absolutely worth the effort.

Classic Chocolate Chip Cookie Cake

Start by preheating your oven to 350 degrees Fahrenheit.

While the oven is preheating, take a 9-inch cake pan and grease the sides, then add a circle of parchment paper to the bottom of it.  A spring form pan will also do just fine.

Next, cream the butter and sugar together for about three or four minutes until they’re light and fluffy. When finished, add the vanilla extract and the egg.

You’re then going to combine this with the flour, cocoa, and baking soda until they are mixed together very well. You’ll then stir in the ​

and be left with a thick dough.

Take the dough and press it into the bottom of the cake pan in an even layer before baking in the oven until the edges are slightly golden, which will take about 18-20 minutes in the oven.6. Press the dough into an even layer in the bottom of the cake pan.

Remove the cake pan from the oven and wait until the dough is almost completely cool, and then transfer the cake onto a rack to cool the rest of the way.

Vanilla Buttercream

Take the shortening and butter and beat them together until the mixture is smooth. Add the three cups of powdered sugar until they are mixed well. Then mix in the vanilla and water. Add the rest of the sugar and add more water until the right consistency is reached.

Putting it All Together

Before you begin layering, use a knife to remove the edges of the cookie layers. Put the confetti cookie layer on a cake plate, then add icing to the top of the cookie. Put the chocolate cookie layer on top of the bottom layer, then top that layer with icing.

Add the last cookie layer (classic cookie) on top of the cookie. Finish off the cake by putting icing on the edges and sprinkles on the top!
