Summer cupcakes

The summer holidays are here and the sun is shinning. So a little batch of yummy summer cupcakes is what we will enjoy today. I have used royal icing which gives a nice crunchy frosting. It is also, in my opinion, the best frosting to use on warm and sunny days.

Today is also a big day for us, because we are leaving Copenhagen next week, moving into our very first house. The kitchen is much bigger and I will get my own little place, where I can sit with all my cake decoration tools. I cant wait……

    I like the colors. Very summery and fresh. I think pastel colors never run out of style for any occasion. As much as I would want to serve it during summer, i would also want to have this types of cupcakes on every occasion.

    Thank you all so much for the whishes. Its really wonderful here but those of you with houses and a garden properly know how much time you can spend just weeding. I know that I have spend too much time outside instead of beeing in the kitchen but I am just so happy to finally have a garden. Right now its time for replacing to old windows with new ones and then the walls will need a little fresh up. When my work spot is ready I will make sure to take some photos.

    Ruby A: Royal icing taste sweet of powdered sugar. I keep my RI cupcakes in a airthight box, not the refrigerator.

    *What does royal icing sugar taste like? Is it like powdered sugar with milk?
    *Also, if I’m frosting cupcakes, how long will it sit, does it need to be refrigerated?

    Those cupcakes are beautiful, yet simple. I love them! Congrats on the new house, I keep telling my husband that I want a new kitchen with a double oven! Maybe I will get my “own” kitchen one day.

    Congratulation and best wishes for your new home!! What kind of paste/fondant do you use when making the butterflies? Fondant/Flower Paste/Mexican Paste?! I’ve got the cutters but not used them yet.

    Too funny…you are leaving Copenhagen and we are arriving Thursday to visit and catch a cruise on Friday. First time for us in Copenhagen…of course the temps suddenly will be HOT. Do you get much humidity there?
