“Applelicious” Apple Cake Recipe

Apples, Apples, Apples. Everyone loves apples and this treat is no different.

Make this snack for a family dinner, to pack in your children’s lunches, or even as a dish to take to a party. No matter what the occasion, everyone is sure to love this special treat, who doesn’t love apples after all.

This “applelicious” apple cake has a mix of fresh apples, dried apples and apple butter to pack in a triple apple threat. Taking only 20 minutes to prepare this delicious apple cake, it makes for such an easy last minute snack too.

Cake Ingredients

  • 2 medium baking apples (usually Granny Smith, but whatever your preference is)
  • 1/3 cup butter, melted
  • 1 2/3 cups of dark brown sugar
  • 1 cup of apple butter
  • 2 eggs
  • 2 tsp vanilla
  • 1 2/3 cups of all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup finely chopped dried apples
  • Maple Icing (recipe included)

Maple Icing Ingredients

  • 1/2 cup powdered sugar
  • 1 TSB melted butter
  • 1 TSB maple syrup
  • 1 TSB milk
  • 1/4 tsp vanilla

Step 1: Preheat oven to 350. Grease 13x 9 pan; set aside. Peel, core and coarsely shred one apple using a grater; thinly slice remaining apple. Cover; set aside.

Step 2: In a large bowl whisk together butter, brown sugar, apple butter, eggs and vanilla until smooth and mixed together.

Step 3: Add flour, baking powder, baking soda and salt. Whisk the ingredients all together and make sure the batter is clump-free. Make sure you don’t mix the ingredients together too much or too little because it can effect how the cake rises.

Step 4: Fold in dried and fresh shredded apple to the smooth cake batter.  

Step 5: Spread batter into prepared pan. Arrange apple slices over batter for an extra layer of apples.

Step 6: Bake 40 minutes or until golden. Remove to a wire rack to add the icing.

To make the maple icing:

Add all of the ingredients together and mix until smooth.

Pour the Maple Icing over a HOT cake and spread the icing over the cake so it is distributed evenly. Allow the cake to cool completely. Dust with cinnamon for an extra touch (optional).

Pouring the icing over the cake while the cake is still warm lets the icing melt making it easier to spread evenly and gives it an extra gooey taste. Yum! 

This recipe makes 24 Appleicious servings.
