Dark Chocolate Coconut Cookie Recipe

For all of you chocolate fans, this one is definitely for you. Whether it’s fall, spring, summer, or winter, chocolate and coconut is always a favorite flavor combination for many. But especially with winter on the way, many of us are looking for comfort food, and this recipe offers exactly that!

These soft, Dark Chocolate Coconut Cookies offer a rich, chocolate flavor with a dash of coconut to create the perfect flavor combination. Bake a batch, make a mug of hot chocolate, and curl up with a good book.

Ingredients

    • 1/2 C Butter
    • 1/4 C Brown Sugar
    • 3/4 C White Sugar
    • 1 Egg
    • 1 Tsp Pure Vanilla Extract
    • 1 1/2 C Flour
    • 1/3 C Dark Cocoa Powder
    • 1/2 Tsp Baking Soda
    • 1/4 Tsp Salt
    • 1/2 C Flaked Coconut

Instructions

  1. Preheat your oven to 350 degrees.
  2. Cream the butter and sugars. Add the egg and vanilla extract and beat well. Add flour, dark cocoa, salt, and baking soda and beat until a soft dough forms. Beat in coconut. Refrigerate cookie dough for 20 minutes. Once chilled, drop dough by tablespoons full on to a greased cookie sheet.
  3. Bake for 8-10 minutes. Let cool on cookie sheet for 10 minutes and then move to a cooling rack.
