No Bake Cake Pop Recipe and Instructions

September 18, 2013 by CJ [email protected] 20 Comments

No Bake Cake Pops

Today I want to share with you a no bake cake pop recipe! I guess technically these would not be “cake” pops… since I make them with sandwich cookies (Oreos to be specific), so maybe I should call them no bake cookie pops? What do you think?

Regardless, if you want to make “cake pops” quickly without having  to bake a cake first, then this is an easy, fast and delicious alternative… no bake cake pops!

No Bake Cookie Cake Pop

You only need 3 ingredients and you can have them made in 30 minutes or less. For these cake pops, I used Oreo sandwich cookies, but but you could also use generic vanilla sandwich cookies or peanut butter sandwich cookies or any sandwich cookie that you like – the sky is the limit!

I didn’t take pictures for this recipe, but if you aren’t familiar with making cake pops, you can see step-by-step pictures of me dipping cake pops on this How to Make Spring Flowers Cake Pop post.

So let’s get started!!

Ingredients

  • 1 pound of sandwich cookies
  • 4 oz. cream cheese
  • 12 oz. of almond bark (chopped) or candy melts
  • vegetable shortening (as needed for consistency)
  • lollipop sticks (24-30)
  • When the balls are chilled, dip the end of the sticks into the melted candy then insert the lollipop stick into the cake pop. Once it’s set, dip the entire ball into the melted candy and allow to set.
  • Note: This recipe yielded 26 cake pops for me, but you could get a few more or less depending on the exact size of your cake balls!

Instructions

  1. Start by chopping the cookies in a food processor until you have very fine crumbs. Stir it around to be sure there aren’t any huge chunks left. Cube the cream cheese and add in into the food processor. Pulse the mixture until a stiff dough forms. *If you don’t have a food processor, see notes below.
  2. Once the dough is ready, roll it into balls that are approximately 1 inch round. Place the balls on a cookie sheet covered with wax paper or parchment paper. Chill them for 10-15 minutes.
  3. While the balls are chilling, melt the almond bark or candy melts in the microwave. I generally melt the candy for 1 minute, stir, then continue to melt in 30 second increments until it’s completely smooth. If the melted candy is still too thick for dipping, stir in small amounts of vegetable shortening (1 teaspoon at a time) until the candy is thin enough to dip the pops.
  4. When the balls are chilled, dip the end of the sticks into the melted candy then insert the lollipop stick into the cake pop. Once it’s set, dip the entire ball into the melted candy and allow to set.

Notes

Note: This recipe yielded 26 cake pops for me, but you could get a few more or less depending on the exact size of your cake balls!

Enjoy!!

*If you don’t have a food processor you can place the cookies in a zip top bag and crush them with a rolling pin or meat cleaver. Then cube the cream cheese and mush it into the crumbs, mixing and kneading until a firm dough comes together.

Thanks for posting. I’m very excited to try these out. I love that this recipe calls for using the entire sandwich cookie…filling and all.

Cream cheese is not available in our place. What could be the best substitute for cream cheese?

Could you dip them in melted chocolate instead of the almond bark? I love this idea my mum won’t let me make cake pops as it is too “messy” but she said I could make these!!

I’ve never tried the cookies with frosting, so I’m not sure! I’d suggest trying it with a small amount and see how it goes!
