Want a piece of cake, but not the whole cake? You can have cake-for-one with these 3 easy and delicious microwave mug cakes. Not only are these recipes simple and quick to make, but they provide the perfect portions for one person. Mug cakes eliminate having left over cake that goes to waste, and it also requires minimal clean up effort. So grab your microwave-safe mug and whip up one of these mug cakes in a matter of minutes!
Cold weather is coming and there is no better way to spend a lazy day then curled up on your couch with a warm fuzzy blanket while watching movies, and indulging yourself with a delicious treat.
You can even make mug cakes for breakfast 😉
1. Cinnamon Pumpkin Mug Cake
Cake Ingredients:
- 4 tablespoons all purpose flour
- 1 1/2 tablespoons granulated white sugar
- 1/2 teaspoon baking powder
- 1/8 teaspoon ground cinnamon
- 1/8 teaspoon ground ginger
- 2 tablespoons pumpkin puree
- 2 tablespoons fat free milk
- 1/2 tablespoon vegetable oil
Cinnamon Mixture Ingredients:
- 1 1/2 tablespoons brown sugar
- 1/8 teaspoon ground cinnamon
- 1/2 tablespoon butter
Frosting Ingredients:
- 1/2 tablespoon butter
- 1 tablespoon cream cheese
- 2 tablespoon confectioner’s sugar
- 1/8 teaspoon ground cinnamon
Step 1
Mix together all cake ingredients in your mug and beat using a small whisk to make sure there are no clumps in the mixture.
Step 2
Take out half of the cake batter in the mug and set aside in a small bowl. In another small bowl, add all of the ingredients for the cinnamon mixture and microwave for 25 seconds, stirring when done.
Step 3
Add the cinnamon concoction to a small pitcher with a spout. (I used one that is used to pour coffee creamer) In a swirl pattern, pour a swirl of cinnamon mixture onto the batter in the mug. Put the rest of the batter back into the mug and then use any remaining cinnamon sugar to swirl onto the top.
Step 4
Put your mug in the microwave until your cake is completely cooked which is about 1 minute and 30 seconds.
Step 5
You can now make the icing. In a small bowl mix all of the icing ingredients and microwave for 15 seconds. Whisk and then put the frosting into a piping bag (or a small zipper plastic bag and cut off the end if you don’t have a piping bag). Pipe or squeeze the icing on top of the cake in a swirl pattern. Add as much or as little icing as you desire.
2. Peanut Butter Chocolate Chip Mug Cake
Ingredients:
- 1 1/4 tablespoon flour
- 1 tablespoon brown sugar
- 1/2 teaspoon baking powder
- 2 tablespoons creamy peanut butter
- 1 tablespoon powdered sugar
- 1 egg
- 1 teaspoon fat free milk
- 1 tablespoons mini semisweet chocolate chips
Step 1
Combine all of your ingredients (except the chocolate chips) into your mug and mix thoroughly until there are no clumps and batter is smooth. Then, mix in the chocolate chips and put in the microwave for 1 minute.
You can serve it in the mug or you can flip it out of the mug and serve it on a plate garnished with some mini chocolate chips or even add a scoop of your favorite ice cream.
For chocolate lovers, you can even adjust the recipe to be chocolate peanut butter chocolate chip cake by adding cocoa powder to the batter.
3. Coconut Lime Mug Cake
Ingredients:
- 4 tablespoons all purpose flour
- 2 1/2 tablespoons granulated white sugar
- 1/4 teaspoon baking powder
- 4 tablespoons coconut milk
- lime zest
- coconut flakes
Step 1
Put all ingredients except for the zest and coconut flakes into your mug. Mix together well.
Step 2
Mix in a little amount of lime zest and coconut flakes.
Step 3
Put in the microwave for 1 minute. Garnish with extra lime zest or coconut shavings.
