Cadbury Egg Brownies
For the brownies:
- 1 cup sugar
- 2 eggs
- 1/2 cup (1 stick) butter
- 1 tsp. vanilla
- 1/3 cocoa powder
- 1/2 cup flour
- 1/4 tsp. baking powder
- 1/4 tsp. salt
For the filling:
- 1/2 cup corn syrup
- 1/4 cup (1/2 stick) butter
- 3 cups powder sugar
- 1 tsp. vanilla
- yellow food coloring
For the frosting:
- 6 cups powder sugar
- 10 tbsp. cocoa powder
- 10 tbsp. evaporated milk
- 3/4 cup (1 1/2 stick) butter
- 2 tsp. vanilla
(P.S. the measurements for the frosting are large because we made enough for the brownies and Carrot Patch cupcakes. You can half this recipe if you are only making one of the treats.)
- Preheat your oven to 350°F and coat your square pan in baking spray.
- With a hand or stand mixer beat the sugar, eggs, butter and vanilla until creamy. Add in the cocoa powder, flour, baking powder and salt gradually.
- Spread batter into pan and bake for 25 minutes.
- While your brownies are baking prepare the filling and frosting. For the filling, combine the corn syrup, butter, and vanilla with a hand mixer or stand mixer. Gradually add in the powder sugar and mix until creamy.
- Transfer 1/2 of the filling into another bowl. Add a few drops of yellow food coloring into one of the bowls with the filling. Now you will have a bowl of white filling and a bowl of yellow filling.
- For the frosting, sift the powder sugar and the cocoa powder together. Set aside.
- Cream your butter with a mixer. Add in the butter, vanilla and evaporated milk. Once fully combined, gradually add in the powder sugar and cocoa powder mixture.
- Once your brownies are done, spread the yellow filling on top of the brownies and refrigerate for 15 minutes. Then spread the white filling on top of the yellow filling and refrigerate for another 15 minutes.
- Microwave the chocolate frosting for 30 seconds and spread it evenly on top of the white filling. Refrigerate for another 15 minutes. Cut into squares and serve.
Carrot Patch Cupcakes
What you need:
- Pre-made chocolate cupcakes (here’s our recipe)
- Chocolate frosting (see above for frosting recipe)
- 1/2 package Oreos, creme removed and crushed
- Strawberries, washed and dried
- 2 tsp. coconut oil
- 1 bag of white chocolate chips
- Orange food coloring
- Microwave the coconut oil for 30 seconds and add it to the white chocolate. Microwave the chocolate and coconut oil for 30 seconds. Stir and microwave for another 30 seconds.
- Add a few drops of orange food coloring to the chocolate and stir until chocolate is orange.
- Dip the strawberries into the chocolate and place on a baking sheet lined with parchment paper. Allow the chocolate to harden or put it in the fridge for a few minutes.
- Core a small hole in the center of the chocolate cupcakes.
- Frost the cupcakes with the chocolate frosting. Avoid the center of the circle when frosting.
- Add the Oreo crumbs on top of the frosting to replicate dirt.
- Place the strawberry in the center of the cupcake.
- Repeat for all cupcakes and serve!
Chocolate Bird’s Nests
What you need:
- 1/4 cup (1/2 stick) butter
- 4 cups mini marshmallows
- 1/3 cup creamy peanut butter
- 1/2 cup milk chocolate chips
- 4 cups chow mein noodles
- Mini Cadbury Eggs
- In a medium sauce pan, melt the butter. Once melted add the marshmallows and stir. Add in the chocolate chips and peanut butter. Stir until the mixture is light brown and completely melted.
- Remove the mixture from heat. Add the chow mein noodles to the chocolate mixture and mix until all of the noodles are fully coated in the chocolate.
- Form the mixture into 2 inch balls and place on a baking sheet lined with parchment paper.
- Immediately, (because the balls will harden quickly), with the back of a spoon, indent the center and place 3 mini Cadbury Eggs in the center and you’re done!
Flower Pretzel Bites
What you need:
- Mini pretzels snaps
- 1 bag of white chocolate chips
- Easter (pastel) M&M’s
- Lay out the pretzels on a baking sheet lined with parchment paper.
- Melt the white chocolate and scoop it into a ziplock bag. Cut the corner of the ziplock bag to make a make-shift piping bag.
- Place a dot of white chocolate in the center of a pretzel. Immediately place one M&M in the center, then 5 more around it. Use one color for the 5 “petals” that is different than the center M&M. Keep the “M” side of the M&M down for good looking “flowers.”
- Let them harden and serve!
