How To Make an Easy Cloud Cake Recipe

Desserts make you happy since they contain sugar, which triggers the release of endorphins like serotonin in your brain. You feel joyful, upbeat, and relaxed due to these chemicals. Cloud cake is among the world’s best desserts. You can get this as a two-tier birthday cake on your special day. You can also choose any flavors you want for this cake or consider using white chocolate fondant.

Ingredients For Cloud Cake

Meringue for cloud cake

  • Unsalted butter, room temperature, for pans
  • 1 1/2 cups of sugar
  • 3 tablespoons of cornstarch
  • 1/4 teaspoon of coarse salt
  • 6 large egg whites, room temperature
  • Pinch of cream of tartar

Cream for cloud cake

  • 1/3 cup of sugar
  • 1/4 cup of all-purpose flour
  • Pinch of coarse salt
  • 1 1/2 cups of buttermilk
  • 3 large egg yolks
  • 1/2 vanilla bean

Caramel for cloud cake

  • Nonstick cooking spray
  • 1/3 cup of sugar
  • 2 tablespoons of corn syrup
  • Whipped cream, for serving

Instructions To Make Cloud Cake

Step 1

Meringue: First, heat the oven to 275 degrees. Butter up three 8-inch circular cake pans. Secondly, line the bottoms and sides with paper, with at least a half-inch space on each side. In the butter-coated parchment in a food processor, sugar, cornstarch, and salt are combined to form a powder.

Step 2

Kindly blend the egg whites with the cream of tartar with a mixer on medium-high speed until soft peaks form. Continue beating for another 5 minutes, or until firm, glossy peaks form, while adding the sugar mixture one tablespoon at a time. Distribute the mixture among pans and smooth the tops. Bake for an hour, then turn off the oven and hold the door open. Let cool for an hour. Move the pan to a wire rack and allow it to cool fully.

Step 3

Cream: Combine sugar, flour, and salt in a bowl. Combine the buttermilk, yolks, vanilla pod, and seeds in a skillet set over medium heat. Whisk the sugar mixture in gradually. For about 9 minutes, while stirring, bring to a gentle boil. Put plastic wrap directly on the surface and place in the refrigerator for at least an hour and up to three days until cold. Strain through a fine-mesh sieve, squeezing the particles.

Step 4

Apply cooking spray to a baking sheet before caramelizing. Combine the sugar and corn syrup in a bowl that can withstand microwaves. For 3 minutes on high in the microwave; whisk after each minute. Stir once more, then microwave for an additional 15 seconds or until golden and caramelized. Pour liquid onto the prepared sheet right away, then allow to cool until set. Remove the sheet and cut it coarsely.

Step 5

With parchment, remove meringue cakes from pans; discard parchment. Next, place one cake delicately on a dish or cake stand. After that, add three tablespoons of caramel and half the cream to the top. Also, add the remaining three tablespoons of caramel, the second layer of cake, and the remaining cream. Lastly, on top, sprinkle the remaining caramel and whipped cream. And all set!

Here is some advice for enjoying dessert without harming your health:

  • Eat fewer portions of desserts.
  • Have a healthy meal beforehand.
  • Minimize your intake of calories and sugar at your regular meal if you plan to have dessert.
